New Blueberry Muffins



Super yummy recipe I tried off of Pinterest today that you should try too.  I added my slight changes on the side, but I seriously want to make them again soon.  So good!

Light Banana Blueberry Muffin Recipe
Ingredients
1 cup quick-cooking rolled oats (not instant) (mine were and it worked fine)
1/2 cup all-purpose flour
1/2 cup whole wheat flour (just one cup of wheat no white)
1/2 cup sugar
1/4 cup ground flaxseed or wheat germ (omitted)
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups bananas, mashed (3 large) (only had two worked great)
1/4 cup butter, melted
1 egg
1 cup fresh or frozen blueberries
Directions
Preheat oven to 375 degrees.  Spray a 12-cup muffin tin with cooking spray and set aside.
Combine oats, both flours, sugar ground flaxseed, baking powder, baking soda and salt in a large bowl.  Mix well and set aside.
In a medium bowl, whisk together bananas, butter and egg.  Add banana mixture to dry ingredients and stir just until dry ingredients are moistened.  Gently fold in blueberries.
Divide batter among 12 muffin cups.  Bake for 20 minutes, or until a toothpick inserted in the center of the muffin comes out clean.  Cool on a wire rack.
